
Build a Solar Food Dehydrator
Dry fruit, vegetables and herbs for long-term storage using only sunlight — no power required.

Drying is one of the oldest and safest ways to preserve food. A solar dehydrator uses the sun’s heat and gentle airflow to remove moisture so fruit, vegetables and herbs keep for months without a freezer.
This simple box-and-tray design needs no electricity and can be built from scrap lumber and window screen.
What you'll need
- Plywood or scrap lumber for a slanted box
- Food-safe mesh screen for the drying trays
- A sheet of glass or clear polycarbonate for the top
- Black paint for the interior (to absorb heat)
- Vents cut top and bottom for airflow, covered with fine mesh
Step by step
- 1
Build the box
Construct a slanted box so warm air rises through it. Paint the inside black to absorb the sun’s heat.

Add trays
Fit removable food-safe mesh trays inside where the produce will sit in a single layer.

Glaze the top
Cover the top with glass or clear polycarbonate to trap heat like a small greenhouse.

Cut vents
Add a low intake vent and a high outlet vent, both screened, so warm air flows up and carries moisture away.

Dry your harvest
Slice produce thinly, lay it on the trays, and set the dehydrator in full sun. Bring it in at night until the food is fully dry and leathery or crisp.
Safety first
Ensure food is fully dried before storing to prevent mold, and keep dried food in airtight containers away from light.
